Cauliflower is great for digestive health as it contains dietary fibre and is packed with antioxidants and phytonutrients. It can boost your brain health as it contains choline, a B vitamin known for brain development. Your gut bacteria will love it too and it can help protect the lining of your stomach. This is a scrumptious alternative to potatoes.

Serves 4 

1 large cauliflower cut into florets 

4 tbsp olive oil

Zest of 1 lemon

Pinch of chilli flakes (optional) 

1 tsp mustard seeds

50g flaked almonds 

Juice of 1 lemon

  1. Preheat the oven to 180 C/ Gas 4. Spread the cauliflower florets in a large roasting tin and drizzle with the olive oil. Season with Salt and Pepper and cook in the oven for 10 minutes.
  2. Remove from the oven. Mix in the lemon zest and chili flakes if using. Sprinkle over the mustard seeds and flaked almonds. Cook for a further 10-12 minutes until the cauliflower is turning slightly brown in places.
  3. Place on a serving platter and drizzle with the lemon juice.
