Courgette & Feta fritters on sourdough with Spinach & Poached Egg

I love making these post work out to share with a gym buddy or on a lazy Sunday when I don’t feel like spending hours in the kitchen. You really have to squeeze the courgette to get it as dry as possible or else the fritters will be soggy. A little bit of flour helps to bind them. Another super simple meal, just how I love it!   I like to add a poached egg and spinach for extra nutrients and some tomatoes. You could add whatever you like or just enjoy them on their own.

Fritters – Serves 2

1 courgette grated, squeezed and patted dry 

25g feta cheese crumbled 

Pinch of chilli flakes

1 egg 

2tbsp flour 

1 tbsp coconut oil or spray olive oil 

  1. Mix all the ingredients in a bowl
  2. Heat spray olive oil or coconut oil in a large frying pan
  3. Using your hands or with a spoon add a dollop to the frying pan to form the fritter. Cook for 4 minutes each side until turning golden and a little crispy
