Emily’s Banana and Chocolate Chip Pancakes

When Emily arrives home from University pancakes are one of her favourite breakfast choices. This is super easy even I can’t mess it up! You literally chuck all the ingredients in a blender and you’re done. Delicious, any time of the day.

Serves 2 (makes 6-8 small pancakes)

1 ripe banana
2 free range eggs
1 tbsp almond milk (or regular milk) plus extra if necessary
80g oats
1 tsp baking powder
50g chocolate chips (dark/milk)
Coconut oil or butter to grease the pan

Place the banana, eggs and milk in a blender and blitz until smooth so about 10 seconds.

Add the oats and baking powder and blitz for another 10 – 20 seconds until smooth. If it is too thick add an additional tablespoon of milk. It should be nice and creamy.

Stir in the chocolate chips. I like to mix the dark chips and milk chips but do whatever takes your fancy.

Grease your frying pan with the oil over a medium heat. Once hot, place a ladleful of batter into the pan and cook for 2-3 minutes on each side. Repeat with the remaining batter.

Serve with maple syrup and sliced banana or topping of your choice. I like to add some berries or chopped nuts.
