Lentils are one of the most nutritious and versatile plant-based proteins.  Puy lentils are rich in antioxidants, iron and magnesium.  They are great for salads due to their peppery taste.  Halloumi makes a wonderful alternative for meat.

Serves 4

250g cherry tomatoes halved

I small red onion finely sliced 

I garlic clove crushed 

Half a lemon juiced

1 tbsp olive oil 

150g Puy Lentils or pre-cooked Puy lentils 

250g pack of halloumi cheese cubed 

Handful of coriander roughly chopped

 

  1. Mix the tomatoes, red onion, garlic, lemon juice and olive oil together.
  2. Cook the Puy lentils until just tender and drain, or if using pre-cooked lentils, heat according to packet instructions. Add to the tomato mixture.  Mix and season well.
  3. Grill the halloumi cheese until golden or dry fry over a medium heat in a frying pan.
  4. Stir the coriander into the tomato mix and then place the halloumi on top.
