Did you know that one serving of cauliflower has 100% of the daily recommended amount of vitamin C?  This underused vegetable is not only high in fiber, low in calories, it also contains some of almost every vitamin and mineral you need.

Serves 4

1 cauliflower broken into florets 

2 tbsp olive oil

1 red onion thinly sliced 

3 tbsp sherry or cider vinegar

1 and half tbsp honey

3 tbsp raisins

Small bunch of fresh dill snipped

3 tbsp toasted flaked almonds

80g baby spinach leaves or lettuce leaves

  1. Heat the oven to 180 C.  In a bowl, mix the cauliflower with the olive oil, season, then place on a roasting tray and roast in the oven for 15 mins.
  2. Remove, stir in the sliced red onion and place the tray back in the oven for a further 15-20 mins until tender.
  3. Meanwhile, mix the vinegar, honey and raisins together to make the dressing.
  4. Place the spinach or lettuce leaves on a serving plate. Place the cauliflower on top.  Pour over the dressing and add the snipped dill and flaked almonds.
