This salad reminds me of BBQ’s, blue skies and warm sunny days.  I love the saltiness of Feta combined with the sweetness of the dried cranberries.  You can substitute the rice with microwave basmati and wholegrain rice.  It tastes good served warm or cold.

Serves 4 

250g basmati and wild rice

400g chickpeas drained and rinsed 

100g pack of dried cranberries

1 red onion thinly sliced

1 garlic clove crushed

3 tbsp olive oil 

2 tbsp lemon juice 

200g pack of Feta cheese crumbled

Handful of flat leaf parsley roughly chopped

  1. Rinse the rice and cook according to packet instructions or use the microwave rice. Allow to cool.
  2. Add the chickpeas, cranberries and onion.
  3. Whisk together the garlic, olive oil, lemon juice and seasoning to make a dressing.
  4. Toss the dressing in with the rice mixture in a large serving bowl. Crumble over the Feta cheese and garnish with the chopped parsley.
